How to Cook a Crown of Lamb
A crown of lamb is nothing more than two or three racks of lamb tied together to create a crown. Using three racks will give the crown a rounder shape. You can have the butcher prepare this for you or you can do it at home yourself. Make a shallow cut in between each rib bone so the racks will curve easily. Bend the racks into a semicircle and tie them together at the base, center and top. Does this Spark an idea?
Things You'll Need
- 2 racks of lamb, assembled as above
- ¼ cup of olive oil
- 2 tbsp. of lemon juice
- 1 tsp. of black pepper
- Basting brush
- Aluminum foil
- Shallow roasting pan

Preheat the oven to 475 degrees.

Mix the olive oil, lemon juice and black pepper.

Brush half of the mix evenly over the crown lamb using a basting brush.

Cover the top of each bone with aluminum foil. This prevents the bones from burning. This is not a necessary step, but is crucial for presentation.

Place the crown into a shallow roasting pan. Place the roasting pan into the oven. Bake for 20 minutes.

Reduce the heat of the oven to 325 degrees.

Use the remainder of the olive oil mix and baste the crown the same as before.

Cook the crown an additional 15 minutes. Serve as desired.
