make Toad in the Hole

This is a good old English recipe that I remember from my childhood in Yorkshire. It is also known, in different parts of England as Pudding-pye-doll. I have no idea what that means. However, it makes a delicious item for High Tea, and basically is Yorkshire Pudding with sausages baked in the center. It can also be served as a main dish with potatoes and a vegetable.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup flour
  • Pinch of salt
  • 1 egg
  • 1 1/4 cups Milk
  • 1 pound pork sausage (links)
  • 2 tablespoons shortening (Crisco)
  1. Step 1

Combine flour and salt in a bowl. Add the egg and milk and beat until smooth.

  2. Step 2

Put the shortening in a small shallow baking pan and for about 4 minutes. Add the sausages and bake at 350 degrees F for 8 - 10 minutes.

  3. Step 3

Pour the batter over the sausages and return the pan to the oven. Bake at 450 - 475 degrees F for about 10 minutes. Lower the heat to 375 degrees F and continue baking for about 20 - 25 minutes. until golden brown.
    Serves 4

Tips & Warnings
  • Halved tomatoes and mushrooms can be added to the sausages.
