Many recipes call for sour milk, especially baking recipes. As fate would have it, sour milk isn't front and center at most stores. That means most bakers will have to make their own. A simple version can be put together from regular milk, vinegar or lemon juice. Does this Spark an idea?

Instructions

      Pour out the amount of milk for the recipe. Let it get to room temperature.

      Add 1 tbsp. of vinegar for every 1 cup of milk in the recipe. If the recipe calls for 1/2 cup of sour milk, add 1/2 tbsp. of vinegar. Lemon juice can be used in place of the vinegar.

      Stir in the vinegar. The milk will curdle in a few minutes.

  • Make only what you need for each recipe. This mix does not lend itself to leftovers.
