How to Make an Easy Mediterranean Lentil Salad
Packed with fiber and protein, lentils are a healthy and satisfying option for lunch or dinner. Lentils also are inexpensive, especially when purchased in bulk. Does this Spark an idea?
Things You'll Need
- 1 cup dried green lentils
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- Salt and pepper to taste
- ¼ cup chopped sun-dried tomatoes (drain oil)
- ½ cup crumbled feta cheese
- ¼ cup chopped Kalamata olives

Pick over the lentils and remove any small stones or grit. Rinse the lentils and add them to a medium-size pot. Add about 4 cups of water and bring to a boil. Once the water is boiling, reduce the heat to low and cover. Cook the lentils on low for about 20 minutes or until tender.

Put the balsamic vinegar, sun-dried tomatoes, oregano, thyme, garlic powder, and salt and pepper in a large bowl. Whisk until blended. Slowly add the olive oil while continuously whisking until the dressing is blended. Taste the dressing and add more seasoning if desired.

Drain the lentils and add them to the large bowl with dressing.

Gently toss the lentils with the dressing. Add the crumbled feta and black olives and gently toss again. This recipe makes two to four servings.

Tips & Warnings
This Mediterranean lentil salad also can be served cold.
For added flavor, use crumbled feta cheese with Mediterranean herbs.
