My Grandma's homemade chicken noodle soup was warmth from the heart. Her homemade egg noodles were the best in the world (in my view) At ninety, she was still making this wonderful family meal.

Instructions

Things You'll Need:

  • Flour
  • Eggs
  • Chicken breasts
  • Salt
  • Chicken Bouillon
  • Carrots
  • Celery
  1. Step 1

    I use skinless, boneless chicken most of the time, but I will also use chicken or turkey bones to make stock.

    In a stock pan 2/3 filled with boiling water I will add my chicken, salt and a pinch of celery salt. Simmer until done. When your chicken is done remove from your simmering stock pot.

    Because we love this recipe I make large batches at a time. Beat 6 eggs in mixing bowl, add salt and pepper and 2 TBS. of olive oil. Start mixing in small amounts of flour. When the batter is too stiff to mix with a spoon, flour your hands. On a floured counter top continue to mix in flour until the dough is stiff enough to roll.

    If you do not have a pasta machine you can easily make your noodles by hand. Roll the dough out on your floured surface until approximately 1/4" thick. Make sure that your surface stays dry with flour to keep the dough from sticking. Sprinkle flour onto the rolled out dough. Roll the dough up, and cut thin slices with a good knife. I was also taught to cut the rolled dough with thread. If you are using pasta machine you can cut your noodles into varying sizes.

    After the dough has been cut into 1/4" slices I add them to the simmering stock a few at a time. Stir occasionally. The noodles will float to the top. Cook until done.

    Cut your cooked chicken into small bite sized pieces. Add the cut chicken and small cuts of carrot and celery. Simmer till carrots are tender.

    For a quick and easy dinner, you can freeze these cooked noodles.

Tips & Warnings
  • Keep a close watch on your simmering soup. The floating noodles need to be stirred often.
