When you need to fix lunch in a hurry, consider making a quick egg salad. Hard boiled egg recipes are economical and easy.

Keep some egg salad in an airtight container in the refrigerator for a few days for a quick meal or snack.

Instructions

Things You'll Need:

  • Eggs, any number depending on how many you need to feed (about 2 per person)
  • Mustard
  • Mayonnaise
  • Salt and pepper
  • Bowl
  • Knife
  • Spoon
  • Pan to boil the eggs
  1. Step 1
    Use fresh eggs.

    Boil the eggs. Fill a pan (that holds at least 2 quarts) about three-quarters full with water. Turn the stove burner on high. Bring the water to a boil.

    Turn the heat down to medium high. Gently place the eggs in the pan using a large serving spoon. Place the eggs in the water by sliding them carefully from the spoon into the water.

  2. Step 2
    Hard boil the eggs for 20 minutes.

    Let the eggs boil for 20 minutes. I set a timer because otherwise I'll forget. Eggs are perfectly hard boiled after boiling in rolling boiling water for 20 minutes. Check the eggs a few times and gently stir them. Add more hot water to the pan if needed.

    Let the eggs cool under cold running water.

    Take the pan off the stove and carefully pour out the hot water. Run the eggs under cool water for a few minutes then let them cool off another 5 or 10 minutes.

    Peel the eggs. Be careful; they may still be hot. When peeled, hold the eggs under more cool water to rinse off any bits of eggshell.

    Chop the eggs into as large or as small chunks as you like. This is an individual preference.

    Taste test the egg salad then serve!

    Depending on how many eggs you use, add enough mayonnaise and mustard for a creamy mixture. Add salt and pepper to taste and stir with the chopped eggs. Mix and do a taste test. Add more of anything that is lacking.

    This quick egg salad should be ready in about 30 minutes. Hungry? Serve the egg salad and enjoy.

Tips & Warnings
  • Set the timer for 20 minutes for hard boiled eggs that are perfect every time.
  • Serve quick egg salad recipe on bread or on a bed of lettuce.
