This simple, gourmet version of macaroni and cheese is a delicious dish everyone will enjoy! Using truffle oil (or shaved truffles if you are able)and lobster turns this childhood favorite into an adult delight.

Instructions

Things You'll Need:

  • Whole wheat elbow macaroni
  • 1lb Lobster cooked and shelled
  • 8 oz cheddar
  • 4oz goat cheese
  • 4oz parmesan cheese
  • 1/4 cup butter
  • 1/4 cup whole wheat flour
  • 2 cups of milk
  • 2 tablespoons white truffle oil
  • salt and pepper
  1. Step 1
     

    Fill a large pot with water and bring to a rapid boil.

  2. Step 2
     

    Add whole wheat elbow macaroni and cook for 9-11 minutes or until tender. (If you cannot find whole wheat, substitute with penne or rigatoni which is more readily available in most supermarkets).

  3. Step 3
     

    Meanwhile, cut cheddar cheese into one inch cubes and set aside.

  4. Step 4

    In a medium sauce pan, melt butter over low heat. Then, whisk in flour.

  5. Step 5
     

    Add milk, salt, and pepper and bring to a boil over medium heat.

  6. Step 6

    Remove from heat and stir in cheddar, goat cheese and grated parmesan.
    Stir until smooth and creamy.

  7. Step 7
     

    Drain pasta and return to pot.

    Toss with truffle oil.

  9. Step 9
     

    Pour cheese sauce over pasta and stir gently until pasta is thoroughly coated.

  10. Step 10
     

    Add lobster (in bite size pieces) and toss briefly.

  11. Step 11
     

    Serve hot, along with a salad for a delicious meal!

Tips & Warnings
  • For twice baked mac and cheese, set oven to 350 and bake for 20 minutes or until bubbling and golden brown on top.
  • Try adding leftover asparagus, shrimp, or ham if lobster is not available.
  • Other cheese like Gruyere, American, Munster, and gouda work well.
