Step 1
Escarole Soup is an Italian favorite and it is fairly easy to make. You will need about 1 Pound of Escarole, 1 Pound of Ground Beef, 2 garlic Cloves, 1 Teaspoon Pepper, 1 Teaspoon Salt, 2 Large Cans of Chicken Stock or Broth, 5 Diced Carrots.

You will first make mini Meatballs out of the Ground Beef, add the garlic to the meatballs (diced) as well as the Salt and Pepper. Next add about 2 Tablespoons of Olive Oil in skillet, make as many mini meatballs as you can and place in skillet, fry both sides about 8 minutes total. Next in large pot place entire contents of Chicken Broth, and Escarole, simmer Escarole in Broth for about 15 minutes.

Next add Meatballs, and Carrots to soup, you may have to add additional Chicken Broth or Stock because Escarole will absorb a good amount of broth. You can also add Orzo to soup if desired. Enjoy!
