How to Make a Tomato Cup Garnish
A tomato cup garnish adds immediate flare and sophistication to an ordinary dinner plate. Not only beautiful but functional as well, tomato cups can be used to hold fresh vegetables, dipping sauces, cold soups or any number of other appetizers or condiments. The key to hollowing out a tomato is having the right equipment. This does not mean you have to go out and buy a tomato cup kit--chances are you already have all the tools you need in your kitchen. Things You'll Need
- Pairing knife
- Long-handled melon baller
- Dinner spoon
- Broccoli
- Cauliflower
- Baby carrots
- Small pot
- Saute pan
- 4 tablespoons butter
- Sea salt and cracked pepper

Cut the top out of the tomato with a pairing knife, as you would a pumpkin, to make a cap. There will be a bit of dangling flesh hanging from the top you just made. Remove any dangling parts from the tomato cap for a clean look.

Remove the guts of the tomato with a melon baller. Discard these or use them in another dish.

Scrape the interior wall of the tomato with a dinner spoon to remove any leftover seeds.

Rinse out the interior of the tomato with cold water and sprinkle sea salt inside. Set the tomato and its top to the side.

Cut the broccoli and cauliflower into florets that will fit in the cup.

Blanch the baby carrots, cauliflower and broccoli by placing them in a pot of boiling water for two minutes.

Melt the butter in a saute pan.

Place the carrots, cauliflower and broccoli into the hollowed tomato.

Drizzle melted butter over the vegetables and add a dash of salt and pepper.

Add the tomato cup to the dinner plate with the top on askew to hold in the heat of the vegetables.
