Roast Asparagus with Peppers and Onions

If you thought asparagus dripping in Hollandaise was the only way to enjoy these tasty spears, you’re in for a yummy surprise. Roasting brings out asparagus’s flavor with a minimum of fat and calories. Adding colorful peppers and sliced onions to crisp asparagus spears creates a feast for the senses. Read on for an easy and healthy asparagus recipe.

Instructions

Things You'll Need:

  • 1 yellow onion, sliced
  • 1 bunch asparagus, trimmed
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • Olive oil
  • Salt and pepper
  1. Step 1

    Preheat the oven to 450 degrees.

  2. Step 2

    Spray or lightly oil a 9X13 inch baking dish.

  3. Step 3

    Spread the sliced onions over the bottom of the dish.

  4. Step 4

    Toss the asparagus spears with the sliced gold and red bell peppers and spread the asparagus and pepper mixture over the onions. Use the entire dish and try for as close to a single layer as possible.

  5. Step 5

    Drizzle the asparagus mixture with some olive oil and season lightly with the salt and pepper.

  6. Step 6

    Roast the asparagus with peppers and onions in the oven for 12 – 15 minutes.

  7. Step 7

    Taste the asparagus with peppers and onions and adjust the seasoning, if desired.

  8. Step 8

    Enjoy!
