Omelettes! What a delicious meal whether it's served for breakfast, lunch or dinner omelettes are satisfying to taste, and filing to the tummy.

They can be dressed whatever way you choose. If you prefer shrimp, chicken or beef, cheese or no cheese. You may add as much or as little ingredients as you wish. Served with a side fruit of your choice and toast. What a meal!

After trying several types of omelettes my favorite choice is the Potato and Cheese Omelette.

For a wonderful, delicious meal here is a easy recipe to follow.

Instructions

Things You'll Need:

  • 5 eggs
  • 20 oz grated potatoes
  • 1 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup chopped onions
  • salt & pepper to taste
  • 2 tsp light olive oil
  1. Step 1

    First take 1/4 cup chopped onions sauté in light olive oil until tender.
    Take 20 ounces of grated potatoes and sauté in olive oil until tender.
    Place sauté onions and potatoes in separate dish.

  2. Step 2

    Second, beat 5 eggs in bowl with a fork, or whisk add salt and pepper to taste. Once eggs are beaten add potatoes and cheese in bowl and mix well.

  3. Step 3

    Pour mixture in a lightly greased omelette pan. Cover pan and let cook for 5 minutes at medium to low heat. Remove pan from stove replace cover with plate. Flip pan over so that uncooked portion is placed on plate. Remove excess oil from pan adding 2 tablespoons of olive oil to pan. Place pan on stove until heated. Take your omelette on plate and place uncooked side in pan. Let cook for 5 minutes or done. Remove omelette from pan. Place on dish of your choice, add fruit of your choice, strawberries make a colorful choice. Add toast and juice and Viola! you have a wonderful meal.
