Miami Spiced Chicken

Things You'll Need:

  • 2 fresh whole pineapples four slices bacon 1/3 cup finely chopped onions 1/3 cup finely sweet green pepper tablespoon curry powder 1/3 cup flour 1/2 teaspoon salt 1/2 cup chicken broth 1 tablespoon cr
  1. Step 1

    Preheat oven to 350 degrees

  2. Step 2

    Cut pineapple in half lengths or long way leaving the leaves intact. remove the fruit and keep the shells. Take the fruit from pineapple and cut up into bite size pieces, you want to have about 2 1/2 cups of this. What is left over you can give to kids or eat your self.

  3. Step 3

    Put pineapple shells on a baking pan or sheet pan. Wrap the leaves with aluminum foil, place in 350 degree oven for about 20 min. In another skillet you want to cook your bacon until almost done, add your onions and green pepper and crushed red pepper. Add curry powder and salt make sure that it is well combined. Next you want to add your chicken broth make sure that you blend it in very well, you want it to bubble a little. Next step is that you want to stir in your whipping cream, add your chicken and peas waterchestnuts permentos and pineapple pieces, let it simmer uncovered for about 5 min. To serve place pineapple shells on plate put Miami Spiced Chicken into pineapple and Wha-la Spiced Miami Chicken for two!!! Enjoy

Tips & Warnings
  • Watch very carefully the whipping cream will thicken up on you, but have no fear just use some extra pineapple juice or just a little water will blend it out.
  • Be very careful Pineapple holds heat
