Things You'll Need:
- 1 lb. ground turkey
- 1 medium onion, sliced
- 1 package flour tortillas
- about 1.5 cups shredded cheese
- olive oil
- non-stick skillet that's large enough to fit tortillas
- spatula

Step 1
Browned turkey on paper towel lined plate.In a non-stick skillet, brown ground turkey over medium heat while breaking it up with a spatula/fork until no longer pink. Drain fat. Remove meat from skillet and set onto a plate lined with a paper towel to soak up the remaining fat.

Step 2
Softened sliced onions.In the same skillet, saute the sliced onions in a few tablespoons of olive oil for 7-8 minutes over medium-low heat or until softened and somewhat translucent. Remove softened onions from skillet and set aside.

Layering of quesadilla.Place one flour tortilla in your skillet, which should have leftover oils from the cooked onions and meat. Spread a layer of the browned ground turkey onto the tortilla, and add a layer of the softened onions. Top the meat and onions with a layer of shredded cheese. Finish the quesadilla by adding another tortilla on top.

Tortillas are golden brown and cheese is melted.Allow quesadilla to cook over medium-low to medium heat for 3-5 minutes until cheese begins to melt. Press down on quesadilla with a spatula to aid in the cooking process. Once cheese begins to melt and bottom tortilla looks golden brown, use a spatula to carefully flip over quesadilla to cook other side. Quesadilla is finished when cheese is melted and both tortillas are golden brown. Repeat steps 3 & 4 with remaining meat and onions. Cut finished quesadillas into triangles and serve immediately.
