These easy turkey quesadillas make a tasty appetizer, lunch, or dinner. You can even make them with ground chicken or beef! Serves 3-4 for lunch or dinner.

Instructions

Things You'll Need:

  • 1 lb. ground turkey
  • 1 medium onion, sliced
  • 1 package flour tortillas
  • about 1.5 cups shredded cheese
  • olive oil
  • non-stick skillet that's large enough to fit tortillas
  • spatula
  1. Step 1

    In a non-stick skillet, brown ground turkey over medium heat while breaking it up with a spatula/fork until no longer pink. Drain fat. Remove meat from skillet and set onto a plate lined with a paper towel to soak up the remaining fat.

    In the same skillet, saute the sliced onions in a few tablespoons of olive oil for 7-8 minutes over medium-low heat or until softened and somewhat translucent. Remove softened onions from skillet and set aside.

  3. Step 3

    Place one flour tortilla in your skillet, which should have leftover oils from the cooked onions and meat. Spread a layer of the browned ground turkey onto the tortilla, and add a layer of the softened onions. Top the meat and onions with a layer of shredded cheese. Finish the quesadilla by adding another tortilla on top.

    Allow quesadilla to cook over medium-low to medium heat for 3-5 minutes until cheese begins to melt. Press down on quesadilla with a spatula to aid in the cooking process. Once cheese begins to melt and bottom tortilla looks golden brown, use a spatula to carefully flip over quesadilla to cook other side. Quesadilla is finished when cheese is melted and both tortillas are golden brown. Repeat steps 3 & 4 with remaining meat and onions. Cut finished quesadillas into triangles and serve immediately.

Tips & Warnings
  • You may substitute ground turkey for ground chicken or beef.
  • Recommend using small tortillas as they are easier to flip.
  • Quesadillas are delicious when dipped in sour cream and/or guacamole.
  • To complete a dinner, the quesadillas go great with refried beans and Spanish rice.
