How to Read Kitchen Food Scales
Most kitchen food scales today are digital, and reading them is simply a matter of noting the number on the display, but older dial kitchen scales are still around and in use. These often weigh food using two different systems: imperial and metric. You can still use these to determine the amount of food you have on the scale. Does this Spark an idea?

Place the kitchen scale on a flat surface.

Place the bowl on top of the scale, if you are using it.

Turn the calibration dial on the back or side of the scale until the hand returns to the zero. This is called "taring" the scale, and it will allow you to use a bowl to hold your food without measuring the weight of the bowl.

Place the food in the bowl.

Look at the outer edges of the dial on the scale readout. The outer edge numbers will typically correspond to metric units. Verify this by looking at the letter next to the zero at the top of the scale. It should have a "g" for metric grams beside it. The zero on the inside of the scale marks will have "oz." for imperial ounces beside it.

Look at the hand on the dial face. It will point to a single scale mark. The outside number will be the weight in grams, and the inside number will be the weight in ounces. Be sure to use whichever measurement system is used in your recipe.
