Instructions

    • 1

Preheat the oven to 400 degrees F. You can grease your baking pan if you're afraid the biscuits will stick, but it's not usually necessary.

    • 2

Put the self-rising flour and the baking soda in a large bowl. Stir together. You can add 2 tbsp. of white granulated sugar if you like a hint of sweetness in your biscuits. Add the butter to the flour. The butter needs to be cold, not melted or softened. Keep it in the fridge until ready to use.

    • 3

Stir the flour and butter with a fork or a spoon until the mixture becomes crumbly. You can also use your hands to mix the mixture.

    • 4

Make a well in the mixture and add your milk to it. Stir until the milk-and-flour mixture becomes a sticky dough. Buttermilk can be used instead of milk. Don't overstir, though, or you could get hard, doughy biscuits. It's not recommended to use your hands at this point as they could get pretty sticky.

    • 5

Sprinkle a light layer of flour on your cutting board and turn your biscuit dough out on it. Knead the dough about three or four times. Next, roll your dough out to about 1-inch thickness with your rolling pin. You can pat it out with your hand instead of using a rolling pin.

    • 6

Coat the bottom of your biscuit cutter and cut your dough into rounds. Don't twist as you cut them or the edges may become pinched and might not rise correctly while baking. You can use cookie cutters, cups or cans with one end opened to cut your dough.

    • 7

Place the biscuits on the baking sheet where they are just barely touching each other. This keeps them from spreading out too much. Bake your homemade butter biscuits for about 15 minutes or until the tops are a light golden brown. Take out of oven and serve.
