You can serve your family a delicious old fashioned cake without all the usual sugar. Diabetic cakes are actually very good--and they are not only for diabetics. These cakes are a healthy alternative to traditional cakes and have just as much flavor. Does this Spark an idea?

Things You'll Need

  • 1/2 cup margarine
  • 2 eggs
  • 2 tbsp artificial sweetener
  • 1 tbsp vanilla
  • 2 cups flour
  • 2 tsp soda
  • 1 tsp cinnamon
  • 1 1/2 cups dates
  • 1 cup chopped pecans
  • 1 1/2 cups diabetic applesauce

Instructions

    • 1

      Beat margarine and eggs together. Add sweetener and vanilla.

    • 2

      Fold in the flour, soda and cinnamon.

    • 3

      Add the dates, pecans and applesauce.

    • 4

      Bake in greased loaf pan at 350 degrees for approximately 1 hour or until the cake springs back when pressed. Remove and allow to cool.

Tips & Warnings

  • add dried apricots instead of dates.
