How to Make White Cheese Dip

White cheese dip, known in Mexican restaurants as chile con queso, is a very popular dip because it's so versatile. Made from a soft white Mexican cheese called asadero, chile con queso is best served with many Mexican dishes, including enchiladas, burritos and tortilla chips.   • Cheese grater
  • 1 cup Asadero cheese
  • 4 oz. jalapeno or poblano chiles
  • 1/4 cup half and half
  • 1 small white onion
  • 2 tsp. ground cumin
  • salt to taste

      Grate the asadero cheese. If you cannot find asadero, white American cheese can be used as a substitute.

      Chop the jalapeno chiles. If you are using poblano chiles, remove the seeds and veins, then chop.

      Chop 2 tbsp. of white onion as fine as possible.

      Heat the sauce pan. Put all the ingredients into the sauce pan and stir until melted. Transfer to a serving bowl.
