Tired of having plain potatoes all the time? Looking for a recipe that's both simple and delicious? This is a great recipe for anyone who loves potatoes and bacon. The recipe goes great with any dish!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 lb of potatoes (Green Giant Idaho Potatoes work best)
  • 1/2 lb of bacon chopped up in 1/2 inch pieces
  • A pinch of Parsley (optional)
  • 2 tbsp of butter, margarine, or olive oil
  • 1/4 cup of chopped onions
  • 1/2 head of minced garlic
  • Salt
  • Pepper
  • Frying pan with cover
  1. Step 1

First, chop up about 1/4 cup of onions and mince about 1/2 head of garlic. Place in separate bowl. Chop up about 1/2 a pound of bacon into squares a half an inch big. An easy way to do this is with the bacon vertical, cut down the center and they chop into 1/2 thick slices.

  2. Step 2

Preheat stove on medium-high heat. Place butter (or margarine or olive oil), garlic, onions, salt and pepper in a frying pan. Saute all the ingredients in the frying pan for about 3 minutes. If there is a lot of extra butter or oil, drain the desired amount.

  3. Step 3

Turn heat down to medium heat. Place chopped up bacon in frying pan for approximately 2 minutes. Stir all ingredients constantly for a few minutes.

  4. Step 4

Mix in chopped up potatoes and parsley flakes with the rest of the ingredients. Reduce heat. Cover pan and simmer until potatoes are tender.
