How to Make Chickpea Salad

Chickpeas, or garbanzo beans, are healthy, delicious, and are a good source of protein. Chickpea salads are perfect for summertime get togethers or anytime you feel like serving a delicious salad.

Difficulty: Easy
Instructions

Things You'll Need:

  • Three Cans of Chickpeas
  • Three Tomatoes
  • Six Green Onions
  • 1/4 Cup Pine Nuts
  • 1/2 Cup Black Olives
  • 1 small Lemon
  • Sea Salt
  • Extra Virgin Olive Oil
  1. Step 1

    Open up cans of garbanzo beans and drain under cool water. Place beans in a large bowl.

  2. Step 2

    Chop up tomatoes into small pieces. For a sweeter flavor, use cherry or grape tomatoes. Place in bowl with garbanzo beans.

  3. Step 3

    Place pine nuts in a small skillet. Heat on the stove for two to three minutes until slightly brown. Allow to cool. Add pine nuts to the salad bowl.

  4. Step 4

    Chop up green onions and add to bowl.

  5. Step 5

    Chop olives into small pieces and add to bowl.

  6. Step 6

    Add three teaspoons of sea salt, the juice of one lemon, and three tablespoons of extra virgin olive oil. Toss mixture with large spoon.

  7. Step 7

    Chill in refrigerator for at least an hour before serving.

Tips & Warnings
  • Add red bell paper to the salad for extra color and flavor.
