How to Make Low Carb Spaghetti Chicken

If your on the Atkins diet, or just watching your carb/sugar intake, you probably aren't eating any pasta. Sometimes I get the craving for spaghetti and this recipe for spaghetti chicken seems to satisfy it while still letting me live a low carb lifestyle!

Keep in mind that this is a great chicken recipe for anyone who loves chicken and spaghetti sauce! This is one of my husband's faves!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Large chicken breast
  • Shredded Mozzarella Cheese
  • Parmesan Cheese
  • 1 packet of dry spaghetti sauce mix
  • 2 eggs
  • Salt and pepper to taste
  • Baking Dish
  1. Step 1
    What you'll need

    Heat oven to 350 degrees.

    With your chicken breast on a cutting board, cut a "pocket" in the chicken along the side. If your chicken breast is big enough, cut 2 pockets.

  2. Step 2

    Mix together in a bowl some shredded mozzarella cheese and some shredded parmesan cheese. Now, stuff as much cheese mixture as you can into the "pocket" of the chicken breast.

  3. Step 3

    Now, dip the stuffed chicken breast in egg and then roll chicken breast in the dry spaghetti sauce mix to coat.

    Sprinkle with salt and pepper if you'd like.

  4. Step 4

    Transfer chicken breast into pam-sprayed baking dish. Larger chicken breasts usually take around an hour to cook.
