It's well known that whole grains, such as those in whole wheat flour, are good for you. Unlike white flour, whole wheat flour hasn't been refined and stripped of most of its fiber and nutrients. Eating healthy is easy with this banana bread batter that calls for whole wheat flour and applesauce instead of traditional white flour and oil. It bakes up nice and moist, whether you use it for a loaf of bread or a tin of muffins. Does this Spark an idea?

Things You'll Need

  • 1/3 cup applesauce
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3 medium bananas, mashed
  • 1 3/4 cups whole wheat flour
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup hot water
  • Cooking spray or butter

Instructions

      Preheat oven to 350 degrees Fahrenheit.

      In a large bowl, beat the oil and honey together with a wire whisk.

      Add the eggs one at a time, and mix well after each addition.

      Stir in the mashed bananas and vanilla extract.

      In another bowl, mix the flour, salt, cinnamon and nutmeg together and add them to the wet ingredients.

      Add 1/4 cup of hot water and 1 teaspoon of baking soda to a measuring cup and stir. Pour this to your other ingredients and stir.

      Grease a 9-by-5-inch loaf pan or a muffin tin with cooking spray or butter. Spread the batter into the pan or muffin tin.

      Bake for 60 minutes for the loaf pan or 18 minutes for muffins. Your bread or muffins are done when a toothpick inserted in the center comes out clean. After taking the pan or tin out of the oven, let them cool for five minutes before removing the bread or muffins.
