Things You'll Need:
- 4-6 chicken breasts, boneless and skinless
- 1/4 cup chopped white onion
- 2 pounds potatoes
- 1/8 tsp salt
- 1 tsp black pepper
- 1 tbsp sugar
- 2 tbsp curry powder
- 1 tsp garlic, chopped
- 6 oz coconut milk

Step 1
Cut potatoes into small chunks. Fry the potatoes in oil until golden. Add onion and stir fry for one more minute. Remove from pan and set aside.

Cut chicken into square cubes and sprinkle with salt, sugar, and pepper. Add chicken, chopped garlic, and curry powder to pan. Saute until cooked.

Step 3
Add chicken, garlic, and curry powder to a pot. Cover with water. Simmer over low-medium heat for 15 minutes. Add potatoes and simmer for 10 more minutes.

Step 4
Add coconut milk to chicken curry and stir until mixed. Remove from heat. Serve coconut curry chicken over rice, or with pita bread.
