How to Make Waldorf Chicken Salad

Waldorf chicken salad is fruity and light. If you're looking for a cool summer picnic lunch idea, check this out.

Things You'll Need:

  • 8 chicken tenderloins (boiled)
  • 1 celery stalk
  • 1 med. bunch seedless grapes
  • 2 apples, cut in small chunks (skin on)
  • raisins and dried cherries
  • 1/2 cup walnuts
  • 3 tbs. lemon juice
  • 1/2 cup light mayonnaise
  • 1/8 tsp. cinnamon or nutmeg
  • 1 tbs. sugar
  1. Step 1

    This Waldorf chicken salad recipe is super easy and yummy too.
    Cut boiled chicken tenderloins into small chunks and place in a large bowl. Chop a stalk of celery into tiny cubes, and add to the chicken. Slice grapes in half and add to the mixture. Cut 2 apples into small chunks. Leave the skin on the apples unless you don't like the skin. Add the apples to the chicken mixture.

  2. Step 2

    Toss in a handful of raisins and dried cherries. Now add the walnuts. It really is this easy! If you like more or less of a certain fruit, you may adjust the recipe to suit your preferences. These are the traditional fruits in most Waldorf chicken salad recipes, but you could try a tropical version with pineapple and mango or any variety that sounds good to you.

  3. Step 3

    Make the dressing. In a small bowl, mix 1/2 cup light mayonnaise with 3 tbs. lemon juice and 1/8 teaspoon nutmeg or cinnamon. (your preference) Add 1 tablespoon sugar (or a little more if you like) and mix well. Fold the dressing into the chicken salad. Add a little at a time, and stop adding the dressing when the salad is well-coated. You may have a little left over. The lemon juice will keep the apples from turning dark, and makes the salad refreshing and light.

Tips & Warnings
  • Customize this chicken salad to your liking. If you don't like a certain ingredient, just leave it out. Try other fruits if you want. You can substitute other fruits and make your own version.
  • Great for picnics!
