How to make Vegetarian Quesadillas

This is my version of a Quesadilla. It is fairly healthy and is completely vegetarian. The Quesadillas are easy to make and take about 15 min. to make.

Instructions

Things You'll Need:

  • 8-10 Tortillas
  • 1 Cup of Cheddar Cheese
  • 1/2 Cup of Jack Cheese
  • 1 Medium Onion
  • 1/2 Large Bell Pepper
  • 1 Can Vegetarian Re-Fried beans
  • 1 Packet of Taco Seasoning
  • 8oz. of Sour Cream
  • Taco Sauce
  • Green Onions for garnish
  • 1 Tbsp. Butter
  • 1 Tbsp. Corn Oil
  1. Step 1

    The first thing that you will need to do is to start on the filling of the quesadillas. Slice the onion into medium thick slices, then slice the bell pepper the same thickness.

  2. Step 2

    In a medium sized skillet heat up the 1 Tbsp. of oil and then add in the peppers and onions. Let them cook for about two minutes, then add in the 1 1/2 Tbsp. of taco seasoning. You can adjust the seasoning for your personal taste either adding more or less. You can also add in garlic if you would like but make sure you do not add to much that it over powers the peppers and onions. Now let the peppers and onions continue cooking with the taco seasoning until they become soft and the onions are translucent. Be sure to not over cook the vegetables so that they still have a little crunch to them. Once they are done cooking transfer them to a plate or bowl, we will be using it as a filling later on.

  3. Step 3

    Next in that same skillet add the butter and when it starts to melt start to scrap up the bottom of the pan (it is loaded with flavor from the taco seasoning and we do not want to just wash that away.) Then add in about half a can of the Vegetarian Re-Fried Beans. Let the beans just warm up and become looser. The butter will create a nice flavor to the beans and will make them a little crispy towards the bottom of the skillet.

  4. Step 4

    Here is when we will begin to assemble and heat up the quesadillas. Begin by getting two tortillas and smearing a few spoon full of the beans on one of the tortillas. Next add a little of the pepper and onion mixture on top of the beans on the tortilla. Now add some of the Cheddar and Jack cheese on top of the beans and vegetable mixture. Then just place the other single tortilla on top like a "sandwich." Assemble the remaining tortilla, beans, peppers and onions, and the cheese as such.

  5. Step 5

    Now take the individual quesadillas and in another skillet or flat griddle warm up and toast both sides. The tortillas will crisp up slightly and make sure the cheese is melted.

  6. Step 6

    Finally cut up the quesadillas into slices like a pizza and top it with a dollop of sour cream, a small drizzle of taco sauce, and little slivers of scallons on top.

Tips & Warnings
  • Using medium sized tortillas works the best but if you have to use large tortillas you do not have to make a huge quesadilla. You can simply do step four on half of the large tortilla and then fold the other half over it and toast it up the same way.
  • Be gentle with the filling in the tortillas so that it doesn't just spill out when you are toasting it.
