Things You'll Need:
- 1 (16 oz) bag lentils
- 1 ham slice
- 3 stalk celery, cut into 1/4-inch pieces
- 3 carrots, peeled cut into 1/4-inch pieces
- 1 bay leaf
- 8 cups water
- salt and pepper
- 8-quart stockpot
- Medium-size roasting pan
- colander
- Measuring cup

Step 1
Preheat oven at 350 degrees. Bake the ham slice for 45 minutes.

Step 2
Prepare lentils. Rinse lentils in cold water.
Prepare carrots and celery stalks. Rinse, peel and cut in to pieces. -
Step 3
Once the Ham slice is baked, prepare by cutting it in cube-size pieces. Adds a nice flavor.

In the stockpot, over a medium heat, add the lentils and approximately 4-cups of water (enough to cover the lentils).

Step 5
Once the lentils begin to boil, lower heat and add the remaining 4-cups water and the carrots, celery, bay leaf and salt and pepper.

Cover and simmer, stirring occasionally (you may need to add 1 or 2 cups of water). The lentils have a tendency to soak up the water rather quickly.

Step 7
Soup is done when the lentils and vegetables are tender. Cooking time is approximately 2 1/2 to 3 hours.
