Carrots are good for the eyes. Sweet potatoes are rich in carbohydrates, beta carotene and vitamin C. What can be more sweeter and healthier than making candied carrots and sweet potatoes? Nothing.

Instructions

Things You'll Need:

  • Carrots
  • Sweet potatoes
  • Sugar
  • Water
  • Cooking utensils
  • Cinnamon
  • Nutmeg
  • Vanilla extract
  1. Step 1
     

    Wash, peel and julienne or "french fry" cut:

    2 servings of carrots
    2 servings of sweet potatoes

  2. Step 2
     

    In a saucepan:

    Combine the carrots and sweet potatoes. Lay the vegetables as flat as possible in the saucepan.

  3. Step 3
     

    Top the vegetables with 1/4 cup of granulated sugar. Lightly stir, then cover the saucepan snugly.

    Covering the sauce pan allows the vegetables to make their own natural juices, without the need to add water.

  4. Step 4

    Simmer on low heat until the vegetable are tender. A fork should easily penetrate.

    Watch your saucepan for burning. Adjust your fire to avoid cooking too fast. Avoid stirring, unless necessary.

  5. Step 5

    Add:

    A sprinkle of cinnamon.
    A sprinkle of nutmeg.
    1/s capful of vanilla extract

    Cook for an additional 2 minutes.

  6. Step 6

    Serve hot! Children will love this recipe.

Tips & Warnings
  • Do not add any water to this recipe.
  • Over cooking vegetables robs them of their nutritional values. Do not over cook. The carrots and sweet potatoes should be tender, not mushy.
