- Oven mitts
- Dental floss, unflavored and unwaxed, or a
- Sharp knife

Step 1
Bring all ingredients to room temperature for even baking. This is a very important step to prevent lumps. Cream cheese can be softened in the microwave in as little as 15 - 30 seconds.

Step 2
Stir eggs in gently after beating the cream cheese. Do not over mix or over beat. An over mixed filling will cause air bubbles on the surface of the cheesecake. And over beaten eggs will cause the cheesecake to rise, then fall, as it bakes.

Step 3
Diligently watch baking time. The cheesecake may look underdone, but it's actually done when the center is still wobbly. The longer it bakes, the more cracks will appear across the top. Use the oven mitts to gently shake to test for doneness.

Step 4
To cut nice, even slices, cut with the unflavored and unwaxed dental floss or a sharp knife dipped in warm water.
