Things You'll Need:
- 4 Eggs, separated
- 2 cups all-purpose flour, sifted
- 2 tsp baking powder
- 1/2 tsp salt
- 2 TBS sugar
- 6 TBS butter, melted
- 2 cups milk

Step 1
Seperate your eggs. Add egg yolks to other ingredients and mix together until batter is smooth. Don't forget to melt the butter before adding it. Don't worry if batter is thin as this makes the pancakes light.

Beat egg whites until slightly stiff. You can use an electric mixer or just a fork or whisk.

Fold egg whites into batter gently.

For small pancakes, drop one Tablespoon onto hot skillet or griddle. Cook on first side until bubbles form on entire surface, then flip. Unless you have a large skillet, you may want to cook one pancake at a time or the thin batter could run together will other pancakes.

Add maple syrup or favorite topping and enjoy!!
Serves 4-5 people (or more) and are perfect for large family breakfasts or visiting friends and family.
