Things You'll Need:
- 2 peaches (not too ripe, not too hard)
- 1 whole pineapple
- 1 large white onion
- 5 tomatoes
- 1 bunch cilantro
- 2 mangos
- 1 red bell pepper
- 1 jalapeno
- water
- salt
- splenda brand sweetener
- large bowl
- cutting board
- wooden spoon
- sharp knife
- 2 limes
-
Step 1
Peel, core and dice your pinapple. Place the pineapple and all of the juices in the large mixing bowl.
-
Step 2
Dice your tomatoes. Make sure that any juices go straight into the salsa bowl. All of the seeds and juice and fruit are necessary.
-
Step 3
Pit and chop your peaches into very small tidbits, place the fruit in the bowl.
-
Step 4
Peel the mangos and remove the inner seed. Slice and dice into very small chunks. Toss this in the mixing bowl.
-
Step 5
Remove the outer paper from your onion, chop into either large or very small pieces, depending on your preference. Add this to the mixing bowl.
-
Step 6
If you want a spicy salsa, do not remove the seeds from the jalapeno! Just remove the stem, slice into rings and finely mince. Be careful not to touch the jalapeno with your fingers. Add this to the mixing bowl. You can add an additional jalapeno for some extra spice.
-
Step 7
For the bell pepper, if you stand it up right and slice the vegetable downward (removing the sides) you can avoid getting any of the seeds. Chop the bell pepper into small pieces. You can add a yellow pepper if desired for additional sweetness.
-
Step 8
chopp up about 1/2 a cup of fresh cilantro. Dice it very small. Add this to the mixing bowl. Stir all of the ingredients in the mixing bowl until thoroughly combined.
-
Step 9
Add 1 cup of water, 4 tbsp splenda, 1 tsp salt and the juice of 2 limes to the bowl. Mix everything together. Allow the salsa to sit in the fridge, covered for about an hour before serving. Taste the salsa and adjust seasonings as necessary. For a sweeter salsa, add a bit more splenda.
