Asked to bring a light dessert or side dish to a luncheon or buffet? I always fall back on this favorite that was given to me by a co-worker back in the 1970's.

Raspberry Jello Fluff or Whip can be put together quickly and easily, using only a few ingredients ~ and no baking!

Serve in a pretty clear glass trifle compote dish, or individually!

Instructions

Things You'll Need:

  • 1 pint whipping cream
  • 1 large Raspberry or Strawberry Jello mix
  • 2 pkgs. frozen red raspberries or strawberries
  • 1 pkg. chopped walnuts
  • 1/2 c. or more sugar
  • 1/4 c. Confectioners xxx sugar
  1. Step 1

    In a large bowl, prepare Jello mix according to package directions. Let thicken in refrigerator until Jello is completely jellied.

  2. Step 2

    Chill a small bowl in refrigerator. Using chilled beaters, whip the cream until soft peaks form. Add 1/4 cup of Confectioners xxx sugar, one tablespoon at a time, to sweeten.

  3. Step 3

    In a colander, drain the juice from raspberries or strawberries. Stir in
    1/2 c. sugar to sweeten.

  4. Step 4

    After the Jello mixture has reached the jelly stage, use electric mixer to whip the mixture until fluffy. It will appear broken up into bits.

  5. Step 5

    Fold in the whipped cream, raspberries and the walnuts (if desired.)

  6. Step 6

    Fold into serving dish of choice.

    Garnish top by piping on additional whipped cream, and decorate with additional raspberries, strawberries, or mint leaves. Refrigerate until ready to serve.

Tips & Warnings
  • Substitutions: Orange Jello and Mandarin Oranges
  • Substitution: Cool Whip may be used, but consistency may vary. Use with caution.
