How to Cook a New York Strip Steak

Cooking your New York strip steak over an open flame is flavorful, delicious and best but you can do a great New York strip steak on your stove top, as well. You need your steak to be at room temperature and not wet. Choose a good steak, USDA Prime New York strip steak, at least 1 1/2" thick, thinner steaks will dry out easily.

Things You'll Need:

  • Olive Oil
  • Salt Pepper Garlic Powder
  • Grill
  • Cast Iron Ribbed Grill Pan
  1. Step 1

    Cooking on the outside grill:

    Trim the outside fat with a sharp knife. Pre-heat the grill at least 15 minutes to between 500-600 degrees. The high temperature is very important to sear the outside of the steak. You are looking for it to become very dark in color but NOT charred.

    Rub extra virgin olive oil on both sides of the steak and sprinkly salt on both sides. Place your steak on the hot grill. Cook for 5 minutes then flip the steak. Do not flip more than once. Once both sides are seared, move the steak to a surface of the grill that is not as hot as the main cooking area. Sprinkle the pepper and garlic powder and continue to grill at this lower temperature for another couple of minutes.

    If you want nice grill cross marks on your New York strip steak, make a 1/4 turn half way through the cooking time for each side. Remove the steak from the grill.

    Cooking on the stove top in a grill pan:

    Pre-heat your grill pan on medium high for abut 15 minutes. Use a grill pan that is cast iron with a ribbed bottom, it provides a solid, heat conducting element and provides a grill like cooking surface. You can use it to cook all other meats, as well. If your steak is thicker than 1 inch, you may want to continue cooking it in a pre-heated oven at 400 degrees for 4-5 minutes per side.

    Place your steak on a plate and top it with a scoop of butter, season it with salt, pepper and garlic powder. Let it sit 5 minutes before you cut it. That gives the juices a chance to distribute. If you cut into it right away, the juices will run out and your steak will be dry.

Tips & Warnings
  • Press on the steak to determine if it is rare, medium or well done. The firmer the meat, the more "done" the steak is. Rare will be slightly more firm than when the meat was raw, medium will feel like pressing on the center of your palm and well done will feel like pressing on the harder, less fatty parts of your hand.
