This warm and delicious lentil curry soup is perfect for cold winter nights. Things You'll Need

  • 2 tbsps. olive oil
  • 1 medium onion, roughly chopped
  • 3 garlic cloves, chopped
  • 2 pieces of celery, diced
  • 2 carrots, diced
  • 2 tbsps. curry powder
  • 1/4 tsps. cayenne pepper or red pepper flakes
  • 2 cups lentils, rinsed and drained
  • 1 large can (28 oz.) of diced tomatoes with juice
  • 6 cups vegetable stock
  • Salt, pepper and ground cinnamon to taste
  • 1/4 cup of chopped fresh parsley

Instructions

      In a large stockpot, heat the olive oil over medium heat. Add the garlic, onion, celery and carrots. Cook the vegetables for 10 minutes or until they soften. Stir constantly.

      Stir in the cayenne pepper and curry powder and continue to cook for another two minutes.

      Add the lentils, tomatoes and vegetable stock to the pot. Bring the mixture to a boil. Reduce the heat and partially cover the pot. Let the soup simmer for one hour, or until the lentils are cooked through and soft.

      Taste the soup and add salt and pepper as needed. You may also want to add a sprinkling of ground cinnamon for added depth.

      Serve the soup immediately. Garnish it with a spoonful of yogurt and a sprinkling of fresh parsley.
