Combine the basil and pine nuts in a food processor, then pulse until coarsely chopped.

Add the garlic and lemon juice and pulse again until incorporated.

Turn the food processor on low and slowly add the olive oil, stopping occasionally to scrape the sides.

Once blended, stop the food processor and add the Parmesan cheese.

Pulse the food processor until the cheese is incorporated, making the pesto appear grainy.

Add salt and pepper to taste.

If you have a charcoal grill, light the coals. Extinguish them when they become red-hot and bank the coals to both sides of the grill, leaving the center clear.
If you have a gas grill, set the jets for indirect grilling. -

Take a sheet of heavy foil and fold up the edges to form a pan large enough to hold the fish.

Brush the foil pan with olive oil or spray it with non-stick cooking spray, then place the fish in it.

Spread the pesto onto the fish in an even layer.

Place the foil pan in the center of the grill, close the lid and bake for 20 to 25 minutes, or until the fish flakes with a fork.

Transfer the fish to a serving platter and garnish with lemon wedges.
