How to Make Lentil Kale Soup
Unlike other beans, lentils cook in a relatively short time and require little preparation beforehand. They are also high in fiber and protein, which makes them ideal for quick and healthy vegetarian meals. Things You'll Need
- 1 cup green lentils
- 1/2 medium onion, chopped
- 1 bunch kale
- 1/2 cup white or yellow corn
- 1 clove garlic, chopped
- 2 tbsp. olive oil
- 2 cups vegetable broth
- 3 cups water
- 1 tsp. cumin
- 1/2 tsp. mild curry powder

De-stem the kale and tear or cut the leaves into coarse pieces.

Heat the olive oil to medium in a large pot.

Saute the onions and garlic in the olive oil until translucent.

Add the kale and corn to the onions and garlic and saute until the kale wilts.

Add the lentils, cumin and curry powder and mix thoroughly.

Add the vegetable broth and water and stir.

Bring to a boil, then cover, reduce heat and simmer for 30 to 40 minutes, or until the lentils get soft.

Transfer the soup to a food processor or blender. Blend until smooth, then return it to the pot.
