  • Tube pan
  • Baking spray
  • 2 cups frozen strawberries
  • 1 cup butter
  • 4 eggs
  • ¼ tsp strawberry extract
  • 1 tsp vanilla
  • 3 cups all-purpose flour
  • 2 cups sugar
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder

      Preheat the oven to 325 degrees F. Move the rack as close to the middle of the oven as possible. Grease the tube pan with baking spray and sprinkle some flour in it. (The flour will help to keep the cake from sticking to the pan when you take it out.)

      Take a bag of frozen strawberries and set them in a bowl of lukewarm water to thaw. Drain the juice in a strainer. Cut the strawberries in small pieces, enough for 2 cups. Set aside for later use.

      Put the butter in a large bowl. Next, add the eggs one at a time, beating the butter and eggs well after each addition. Add the vanilla and strawberry extract, mixing together.

      Combine the flour, sugar, salt, baking powder and soda in another large bowl. Slowly add the flour mixture to the creamed butter and eggs. Beat the mixture together. Try to get any lumps out of the batter.
