Salads are one of the healthiest meals you can make. The only problem is that many people ruin this healthy meal by loading it down with high-fat dressing. Not all high-fat dressings are unhealthy. Some are actually quite good for you. Take balsamic vinegar and olive oil dressing, for example. Olive oil is high in fat, but it's a good form of fat that can help lower cholesterol. Things You'll Need

  • Mason jar
  • Plastic wrap
  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 2 cloves garlic, crushed in a garlic press
  • 1 sprig of rosemary
  • Sea salt, to taste
  • Fresh cracked pepper, to taste

Instructions

    • 1

      Pour vinegar and olive oil into a Mason jar. A Mason jar is the perfect vessel for dressings because once the lid is put on the jar it can be shaken to thoroughly mix the ingredients. If you add a piece of decorative cloth on the top, the dressing can even be given as a gift.

      Add garlic, herbs and seasonings. Be sure to remove the rosemary from the sprig before adding it to the dressing.

      Place plastic wrap on top of the jar. Plastic wrap will help ensure that the dressing stays in the Mason jar when shaking occurs.

      Seal the jar and shake to combine. Attach the lid and shake until the dressing thoroughly combines.

      Shake again before serving. This dressing will separate as it sits. Be sure to shake again to recombine the ingredients.

Tips & Warnings

  • If dried rosemary leaves are used, crush them before adding them to the dressing. Dijon mustard can be added to help emulsify the dressing. If the dressing tastes too vinegary, add more olive oil.
