Bake Easy Banana and Chocolate Chip Muffins

This recipe is very simple and the muffins are so delicious they will disappear in no time! They take no time to make and are always popular.

Instructions

Things You'll Need:

  • 1 large egg
  • 40 ml cooking oil
  • 40 ml milk
  • 3 mashed ripe bananas
  • 1 cup/250 g flour
  • ½ cup/125 g granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • ½ cup/100 g chocolate chips
  1. Step 1

    Preheat the oven to 200°C (gas mark 6 or 400°F). Mash the bananas in a bowl. Place the egg, oil, mashed bananas and milk in a large mixing bowl and beat together.

  2. Step 2

    In another bowl place the flour, sugar, salt, baking powder and chocolate chips and mix. Pour in the liquid into the dry mix and stir until just blended.

    It is important not to overmix at this stage. Mix until just blended and no more. If a few lumps remain don`t worry as they will disappear in the baking.

  3. Step 3

    Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean (apart from any chocolate!).

Tips & Warnings
  • These are good warm from the oven, though we prefer them fully cooled.
  • As with all muffins do not over mix the ingredients.
