Smoked pork shoulder roasts are already cooked and only need to be completely heated throughout. However, they are pretty salty, which doesn't appeal to most people. Here's a way to boil that harsh saltiness out of the shoulder, which will also tenderize it to the point where the meat falls right off the bone. Serve with fresh green beans and creamy scalloped potatoes.

Instructions

Things You'll Need:

  • Large pot with a lid
  • 4-5 pounds of smoked pork shoulder roast
  • 1-2 tablespoons of mustard
  • 2 tablespoons of cider vinegar
  1. Step 1

Place the smoked pork shoulder into a large pot and cover it with cold water. Add the mustard to the pot.

  2. Step 2

Bring the water to a boil, cover the pot and turn the heat down. Simmer the smoked pork shoulder for two hours.

  3. Step 3

Remove the roast from the pot and discard the water. Rinse the shoulder well under cold running water and return it to the pot.

  4. Step 4

Cover the smoked pork with fresh cold water and add two tablespoons of cider vinegar to the pot. Bring to a boil, reduce the heat and simmer for about 45 minutes.

  5. Step 5

Transfer the boiled smoked pork shoulder to a serving pan. Allow it to set for 15 minutes before slicing.
