Make a baby shower extra festive with a tiered cupcake cake, frosted in pastel colors and decorated with assorted candy sprinkles. Rather than a sheet or round cake, cupcakes are used to build a circular "cake" in three tiers. The "cake" is ready to eat in perfect portions, and guests can enjoy more than one cupcake.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Packaged yellow cake mix
  • Paper cupcake holders
  • Cupcake baking pan
  • Large platter or tray
  • 2 to 3 cans white prepared frosting
  • 4 small bowls
  • 4 small spatulas
  • Food coloring
  • 3 glass cake stands on pedestals
  • Small paper doilies
  • Candy sprinkles and decorations
  1. Step 1

Follow the instructions on the back of the yellow cake mix package for 24 or more cupcakes. The back of the box lists additional ingredients needed. Place individual paper cupcake cups into the cupcake baking pan and fill each 2/3 full with cake mix. Bake in oven as instructed until done. Let cool on platter. Bake as many cupcakes as may be needed to fill three tiers of cake plates.

  2. Step 2

Divide the cans of prepared white frosting into four bowls. Add a drop or two of each of the following food colors: red, yellow, blue and green. Mix each with a small spatula thoroughly to make pastel-colored frosting.

  3. Step 3

Clean and dry the three glass pedestal cake plates. Place the largest plate on table that will feature the cupcake cake. Lay three to four paper doilies to cover the plate. Place the medium-size cake plate in the center of the larger one. Lay a few paper doilies on the medium place. Place the smallest cake plate on top of the medium one, and place a few doilies on that one.

  4. Step 4

Holding a baked cupcake in one hand, frost the top with the other hand using the spatula and one of the four frosting choices. Decorate with candy sprinkles and decorations, and place it on a platter. Continue frosting and decorating the remaining cupcakes, alternating frosting colors.

  5. Step 5

Transfer the frosted and decorated cupcakes to the three tiers of cake plates in a circle, mixing the cupcakes with different-colored frosting. Set aside any extra cupcakes and refill the cake plates during the baby shower as the cupcakes are eaten.

Tips & Warnings
  • One 18.4-oz. box of packaged cake mix makes 24 cupcakes. The three tiers of pedestal cake plates may hold more than 24 cupcakes; use 1/2 of a second box of cake mix to bake 12 additional cupcakes to properly create the cupcake cake.
