Spinach Balls are a great little appetizer to take to any gathering. Guests will rave about these delicious bite sized treats. It's also a sneaky way to get the kids to eat their veggies!

Difficulty: Easy
Instructions
  1. Step 1

    INGREDIENTS:
    2 1/2 c. herb stuffing mix
    2 10-oz. packages frozen chopped spinach, thawed and drained.
    4 large eggs, beaten
    1/2 c. Parmesan cheese
    1/4 tsp. thyme
    1/2 tsp. garlic salt
    1 medium onion, chopped
    3/4 c. melted butter or margarine
    1/4 tsp. pepper

  2. Step 2

    In a large mixing bowl combine stuffing mix, spinach, beaten eggs, Parmesan cheese, thyme, garlic salt, chopped onion, melted butter and pepper. Stir by hand until all ingredients are combined.

  3. Step 3

    Scoop out one Tablespoon of mix at a time, and shape into balls. I usually make them the same size as you would a small meatball. Place spinach balls on a baking sheet sprayed with non-stick cooking spray.

  4. Step 4

    Bake spinach balls in a preheated 350 degree oven. Bake for 20 to 25 minutes, or until lightly browned on the bottom. Serve immediately, or place in a crockpot to keep warm.
