How to Cook Sirloin Steak: Broiled Recipe

["Quick and Easy" Recipe #8] I will teach you how to make "Broiled Sirloin Steaks Smothered with Sautéed Onion and Bell Peppers"! (I'll show you a unique way to saute the onions and peppers too.) You can make this unbelievably good recipe in less than a half hour and have it for dinner tonight! Few things are more delicious than a thick, juicky, well seasoned steak. One of those few things is - that same steak smothered in tender sauteed onions and green peppers. Wow, just thinking about it is making me wish I had one, RIGHT NOW! Let me show you how "Quick and Easy" it is to make mouth-watering Broiled Sirloin Steaks Smothered with Sautéed Onion and Bell Peppers. It such a great pay off for such an easy recipe. Let's get started:

Instructions

Things You'll Need:

  • sirloin steaks of your size preference, at least 1 inch thick
  • butter
  • onion and green peppers, med skillet (if you want sauteed onions and peppers)
  • foil wrapped broiling pan
  • non-stick spray, olive oil (or whatever oil you have)
  • salt, pepper, garlic powder, and Old Bay Seasoning
  1. Step 1
    Choose two nice thick steaks and season them well.

    First set your oven to "Broil". Then line your broiler pan with foil. Spray the surface of the foil with non-stick spray or rub the foil with olive oil only where you're going to put the steaks. Go very sparingly, any oil that's not under a steak will cause unnecessary smoking. The fatty juices that come out of the steak while it's cooking will cause more than enough smoke. I would definitely recommend turning off your smoke detector for this recipe. Lay the steaks out and season them with salt, pepper, and lots of garlic powder. Hit them with just a few shakes of Old Bay Seasoning too. Repeat on other side. When your oven reaches temperature, put your steaks in on the top rack. Keep the oven door shut. Crack a kitchen window if you can, to let out the smoke, if necessary.

    (If you don't want onions and peppers, just omit them and continue following steak recipe. Or, add mushrooms if you like.) Put your skillet on the stove on medium high heat. Put approx 1 tbsp of butter in the skillet. While the butter is melting, vertically slice up your onions and green peppers. By the time you're done, your butter should be hot enough to put the vegetables in. Dump them and hit them with only a little salt, garlic powder, and Old Bay. Stir them around a few times and then put the lid on. Turn the heat down to medium. Stir frequently.

    Check your steaks to make sure they're not burning on top. They shouldn't be, but every oven is different. If they are you can turn them over and/or move them to a lower rack. Only do this if it is really overcooking them fast. If they're ok, let them go until they look like the steak in the picture. Then flip them. I flipped mine at about 8 minutes from when they starting sizzling.

    Check out your veggies. If they look like the onions in the pic, they're almost done. Take the lid off and turn them back up to medium high. At the point that you're doing this your steaks should be about done. Look at them and compare them to the pic from STEP 3. Steaks 1.5 inches thick that look like this and cook for about 16 - 18 min will be med/well to well done. I'll give you some pointers about what to do if you're going for something less well. Keep in mind, that's a bit more tricky in a home oven.

    Pull your steaks out and set them down on a tilt so that all of the juice begins to collect on one end of the pan. See the picture. Cut a steak to see how well done they are. If you want to cook them up a little more, put them back in and keep a close eye on them. If you're satisfied with your steaks, take them off of the pan and put them on a plate. If you leave them on the hot broiler pan, they will continue to cook up and eventually dry out.

    Dump this steak juice into the skillet with your veggies. Let them simmer in the juice for about another minute then turn the heat off. Adjust the cook time of your veggies for the amount you are cooking. Make sure you stir them while they're simmering.

    When the veggies are done, spoon them out with a slotted spoon and lay them on top of the steaks. Then drizzle them with the remaining juice to the amount of your preference. You're done!! Tips & Warnings
  • If you want to shoot for a less well done steak. Here are some pointers that I use. I love medium rare steaks and still find this recipe to be phenomenal. However, try these steps. Before you sauté your veg, coat your skillet with olive oil and turn the heat up to very high. Olive oil will get a lot hotter than other oils before it starts smoking. When it does though, put your steak in. You're trying to shock the daylights out of this steak. You want to get the outer layer to brown super fast before the center catches up. Let it sit on each side for about 20 seconds. Then put it into the oven. It's still a bit tricky to get anything below medium to med/well this way. Our residential ovens just don't carry the power that commercial equipment does. So it's going to cook a lot slower under the broiler. The skillet and the oil on the foil will help the steak to brown for you, though.
  • Don't let your veggies dry out. Keep the lid on and keep the heat on med until your steaks are about 3 - 4min from being done. Then take the lid off and turn the heat up to medium high to prepare for the steak juice.

on 11/8/2009 Thanks! This was super helpful! I made this for dinner tonight (minus the onions and peppers) and it came out great. The oven caught on fire because the juices on the foil but other than that the steak tasted wonderful! (Good thing I was watching the oven like you noted and had the windows open!) It was my first time ever making a steak so the step by step directions were extremely helpful. Also, I made the baked potato in the microwave and that was also great! Thanks again! :)
