How to Make Easy Summer Salads

Summer means eating lighter but that doesn't mean living on just green salads. You can make this filling summer salad ahead of time and serve chilled. This is an easy recipe using hard-boiled eggs and cooked ham. Eggs are great for protein and the celery adds fiber. Make this into a delicious wrap with a whole wheat tortilla. This delicious salad makes a great lunch.

Instructions

Things You'll Need:

  • hard-boiled eggs
  • mayonnaise
  • ham
  • celery
  • onion
  • black pepper
  • whole wheat tortillas
  1. Step 1

    Peel about 6 hard-boiled eggs. On a cutting board chop the hard-boiled eggs and put into a medium mixing bowl.

    Take your cooked ham and trim any fat off of it. Cut the ham into small cubes. After ham is cubed it should be about 1 cup of ham. Add this to the mixing bowl.
    Take 1 stalk of celery and wash it well. Chop the celery very finely and add to the mixing bowl.

  3. Step 3

    Add 1/2 teaspoon minced onion to the mixing bowl with the chopped eggs, celery and ham. Add 1/2 teaspoon black pepper. Add 3 tablespoons mayonnaise and mix well. I always use light mayonnaise. Try it and you won't go back to the regular. You just made a tasty filling for wraps.
    Time to make some sandwiches. You can use this egg and ham salad in any kind of wrap or pita bread.

  4. Step 4

    Another use for hard-boiled eggs and ham is a tasty pasta salad. Just follow the recipe above and mix into a 1/2 pound of cooked elbow macaroni. Add about 1/2 cup more mayonnaise and you have a tasty pasta salad with ham and eggs! Try using whole grain pasta for a healthier salad.
    variations on this salad: add chopped bell peppers, cucumber chunks, grape tomatoes about 1 cup of each to really make a nice chunky salad.

Tips & Warnings
  • I don't usually add salt to this recipe. Eggs and ham are salty enough.
  • Eggs are an excellent source of protein.
