Chicken and broccoli stir fry is a wonderful change of pace from the same old boring dinner. Serve chicken and broccoli stir fry over rice or Asian noodles for a complete meal. You could also cook up a couple of egg rolls and serve these as a side dish to round out your chicken and broccoli stir fry dinner.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 boneless chicken thighs
  • 1 cup frozen broccoli flowerettes
  • 1 can water chestnuts (drained)
  • 1 can bamboo shoots (drained)
  • 1 small onion julieanned
  • 3 carrots julieanned
  • 1 package stir-fry seasoning mix
  • 2 tablespoons cooking oil
  1. Step 1

    Blend the chicken and broccoli stir-fry seasoning according to package directions. Set aside.

  2. Step 2

    Put the cooking oil in a non stick skillet and place on medium heat. Add the chicken pieces and stir fry until thoroughly cooked, about 12-15 minutes. Add broccoli, water chestnuts, bamboo shoots, onion and carrots. Stir fry until desired tenderness is achieved (I like my vegetables still a little crisp). Add the sauce mix and cook until it thickens, about 1 minute. Serve while the chicken and broccoli stir fry is still hot.

  3. Step 3

    Chicken and Broccoli Stir Fry may be served over rice, noodles, or along side of them, it is just according to your preference. This meal of chicken and broccoli stir fry is a delicious change of pace that while is a little more expensive, chicken and broccoli stir fry still won't empty your pocketbook.
