Things You'll Need:
- 2lb. Ground Turkey
- 3/4 C Salsa
- 2 Tbsp Chili powder
- 3/4 tsp Salt
- 2 Eggs
- 1 C of each, crushed Tortilla chips, sliced Scallions and Shredded Cheddar
- 1/2 chopped Cilantro

Step 1
Preheat oven to 425*
Whisk the eggs with salsa, chili powder and salt in a bowl.
Next add ground turkey and the rest of ingredients. Mix with hands to combine all ingredients. -
Step 2
Form into Two Loafs
Make sure the mixture is holding together on its own. Place on pan lined with nonstick foil (Reynold's wrap is the best). Brush the top of each loaf with some salsa and bake 35 to 40 minutes or if using a meat thermometer, it should read 160* -

Meal One; Spicy Turkey Meatloaf
Slice 1 1/2 loafs and serve with steamed zucchini, yellow squash, green and red peppers and onions. To save time and energy, make a foil pack and add all veggies and a couple of dabs of butter and salt & pepper to taste. Seal tightly and place in baking pan and add to the oven when Meatloaf goes in. Your dinner will be ready in 40 min. Want biscuits or rolls, place in oven 5 min. before the meatloaf is ready.

Meal 2; Tortilla Wrap
Take a flour tortilla and spread with salsa and mayo, top with lettuce and shredded cheese, add crumbled meatloaf. Roll into a wrap

Meal 3; Chili
In sauce pan, on medium heat, combine, 2 cans 16oz. tomato sauce, 1 16oz. water, 1 can red beans, diced onion, chili powder to taste and leftover meatloaf. Turn heat down to simmer, for 30 minutes. You can add pasta if you want, just add with all ingredenits. You may need to add water, a little at a time. At this point, you can decide if you want thin or thick chili. Do not allow mixture to boil and stir often.
