How to Make Scrumptiously Simple Whole Wheat Shrimp Quesadillas

Who doesn't love a great quesadilla? They are relatively cheap and super easy to create. Not to mention tantalizing to our taste buds! The pre-seasoned shrimp makes assembly easy and packed with flavor. While the whole wheat tortillas make the exterior crisp to compliment the soft gooey cheese center, it is a delectable delight. If you're looking to add the power of "wow" to your traditional cheese quesadilla, this is the recipe for you! Makes 2 large quesadillas.

Instructions

Things You'll Need:

  • 1/2 of a medium onion, chopped
  • 1 can of sliced black olives
  • Shredded Cheese (Mexican blend)
  • Manny's Fajita Style Whole Wheat Tortillas
  • Phillips Seasoned Shrimp Garlic-Herb Steamer Creations
  • Pam non-stick spray(butter flavored)
  • Garnishments: sour cream and salsa (optional)
  1. Step 1

    Start by placing the Steamer Creations Phillips Shrimp bag in the microwave according to directions. (Shake the bag and make sure they are all cooked; depending on your microwave, it may take longer than package instructs for overall doneness. Approx. 5-6 mins.)

  2. Step 2

    In the meantime, open the can of black olives and chop the onion, set aside. Take the shrimp out of the microwave, check for doneness, open the bag, and let it cool for a minute. While it's cooling, lay out two tortillas, sprinkle each with a handful of cheese until most of the tortilla is covered. Top the cheese covered tortillas with the black olives and onions; set aside. After the shrimp has cooled for a few minutes, remove the tails off, and cut them into smaller bite size pieces. Place the shrimp on top of the cheese covered tortillas and top each with another tortilla. Press down. Heat a large skillet on medium high heat.

  3. Step 3

    Spray the skillet with non-stick spray. Transfer one quesadilla from the counter to the skillet. Cook until golden brown, flip, gently press down, and cook until golden brown on the other side- approx. 5 mins total.Remove from skillet, let it cool for 1 min., and cut into fours. Repeat with the other quesadilla. Serve Warm. Enjoy!!

Tips & Warnings
  • You can replace the whole wheat tortillas with flour tortillas ,if you prefer.
  • Of course, you can add many more ingredients than listed above. Diced tomatoes, black beans, and other veggies make great additions. Feel free to mix, match, and make it your own!
  • The shrimp will be hot when it's removed from the microwave! Let it cool before handling or allowing children to handle. Drain the liquid from the package for faster cooling time.
