Red Beans and Rice is a traditional New Orleans favorite recipe. It’s so easy to make and so dang good! Great for the family or a hungry crowd. It's enjoyed by everyone, rich or poor. So get out the big pot and let's get cookin'.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 large yellow onion, chopped
  • 1 bunch green onions, chopped
  • 2 tablespoons of vegetable oil
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped celery
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon of black pepper
  • 1 teaspoon thyme
  • 1/2 lb. smoked sausage, cut into small pieces
  • 1 lb. dried red beans that have been soaked in water overnight
  • 1 lb. ham, cut into small cubes
  • 4 bay leaves
  • 4 sprigs parsley, chopped
  • 3 tablespoons garlic
  • 10 cups water
  • Rice
  1. Step 1

    In a large pot, heat the oil over a medium-high heat. Cook the onions, bell peppers, celery, salt, cayenne, black pepper and thyme in the oil for about 5 minutes.

  2. Step 2

    Add the red beans, ham, sausage, bay leaves parsley and garlic to the mixture. Add enough water to cover everything.

  3. Step 3

    Cover and bring the pot to a boil, and then reduce the heat to medium.

  4. Step 4

    Cook for about 2 hours.

  5. Step 5

    Add more water, if needed, and mash about a cup of the beans with a wooden spoon, return to the pot and stir thoroughly.

  6. Step 6

    Cook for 1 more hour. Serve over Rice.

Tips & Warnings
  • Add a little extra Cajun seasonings to kick it up!

Back when I lived in southern Louisiana, some ladies at our church would bring their homemade red beans and rice, gumbos, and other cajun delicacies for us to indulge in after services. I miss their beans the most, so I will have to try making your recipe. 5*
