How to Make Buffalo Chicken Wings - naked or with coat

This is one of Uncle Tommy's favorite ways to make Buffalo style chicken wings. His choice of sauce is spicey and hot, but not too hot to enjoy. Which is best, naked or wearing a coat? Try both wing recipes and decide for yourself.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • chicken wings
  • Buffalo sauce
  • cooking oil and pan
  • flour and milk for coated wings
  1. Step 1

    Cut wing tip from wing and discard, then cut wing drumette from other part at the joint, giving you two pieces. Or, if you're picky like Uncle Tommy, just buy drumettes from the grocery store. Rinse wing pieces under cold running water, then pat dry.

  2. Step 2

    FOR NAKED WINGS : In a pot or deep fryer, heat cooking oil to about 325-350 degrees. When oil has reached temperature, place chicken pieces in hot oil, being careful not to get burned by splashing. Cook until golden brown and done. Make sure Buffalo wings are done by cutting into meat.

  3. Step 3

    FOR COATED WINGS : Dip chicken in milk, then roll in flour. Repeat this step. Cook the same way as described in step two.

  4. Step 4

    When wings are done, they're ready for the treatment. Place chicken pieces in a bowl, pour on Texas Pete Buffalo Wing Sauce, cover and shake. Of course you can substitute your favorite sauce, but this one deserves a try.

on 4/9/2009 just drumettes!!! We'd get along GREAT because I like the forearm part or whatever you call it. That sounds like a good idea. You eat the drums and I'll eat the other part and together we'll lick the platter clean. And I'll be just as fat as Jack Sprat's wife too./*****
