Curry is a blend of spices and there are several types of curries. I like Madras curry and this recipe is about how to cook chicken curry using Dr. Patak's Madras curry sauce. You need to buy a jar of it in the local grocery store. I would prefer to make it from scratch but this is quick and easy recipe.

Instructions

Things You'll Need:

  • cooked chicken breast or legs one pound
  • Dr. Pataks Madras curry sauce
  • diced fresh tomatoes 3
  • coriander ( one bunch)
  • diced onions about half a cup
  • stovetop saucepan
  1. Step 1

    Put the chicken in a wide sauce pan with a lid on the stovetop. Add some of Dr. Pataks curry sauce. Add the diced tomatoes, onions and enough water to keep the chicken heated. Boil all ingredients

  2. Step 2

    Bring heat to simmer or medium low. Simmer for at least 15 minutes until onions and tomatoes have a transparent consistency. Throw in the coriander.

  3. Step 3

    Pour over rice or eat alone with salad. Enjoy. This serves about five people. When cooking for one, just use a tablespoon of the curry sauce and about a cup of water with about 6 ounces of cut up chicken. Follow the same directions by boiling, simmering and serving.

Tips & Warnings
  • you may wish to add carrots and potatoes to your curry
  • if you have vegetarians in the family use tofu instead of chicken
  • You might like some cauliflower as well
  • yogurt will cool down a hot mouth
  • don't drink water until the very end of the meal so that the curry isn't to hot
  • you might want to try to cook chicken with the Madras curry sauce from its raw state though you may need to vary your method
