How to Make a Chicken Curry Fast
Traditional curry powder is a customizable blend of spices that can include cardamom, cumin, coriander, fenugreek, turmeric and pepper. But store-bought, already blended curry powders speed up the process. Add in some diced chicken, tomato sauce and wine for balance and yogurt for richness for a meal that comes together in less than an hour. Things You'll Need
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 tbsp. curry powder
- 1/4 cup tomato juice
- 1/4 cup dry red wine
- 1 lb. boneless skinless chicken breasts, chopped
- 1 cup yogurt
- Salt and pepper, to taste
- 1 cup white rice, cooked

Heat 1 tbsp. olive oil in a large skillet over medium high heat. Add one chopped onion and cook for three minutes or until translucent. Add 2 tbsp. curry powder and cook for one minute, stirring constantly. Add in 1/4 cup tomato juice and 1/4 cup dry red wine.

Place four cut up boneless skinless chicken breasts into the pan. Cover and let cook for 10 to 15 minutes, stirring occasionally, or until the chicken is cooked through. Stir in 1 cup yogurt. Cook for two to three minutes until mixture is heated through. Salt and pepper, to taste.

Pour 1 cup cooked white rice onto the serving platter. Ladle the chicken curry mixture over the rice. Serve while warm.
