How to bake a cake at High Altitudes!

  1. Step 1

    Living in the Colorado mountains, above 8,000 feet, I had to learn how to bake all over again. Cakes were a challenge. They either fell or they were tough. Water or other liquids evaporate faster and boil at lower temperatures.

  2. Step 2

    I did some research and found that If you increase your oven temperature 25 degrees and reduce baking time by 20% helped alot. Also reduce baking powder or soda by 1/4 tsp., reduce sugar 1-3 tblspns. per cup, increase liquid 3-4 tblspns. per cup, reduce fat 2-3 tblspns. per cup.

  3. Step 3

    Use large eggs and cold water for extra strength. High altitude cakes tend to rise higher so you might want to remove the upper rack in you oven. Always use a wooden toothpick to check for doneness. Good luck!!! Cookies tend to do better than cakes, but if not just use the same adjustments.
