Things You'll Need:
- 3 pounds lamb
- 1-1/2 tablespoons vegetable oil
- 1/3 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons all-purpose flour
- 4 cups beef broth
- 1 large tomato, seeded and chopped
- 5 garlic cloves, crushed
- 1 teaspoon thyme
- 2 bay leaves
- 6 carrots, sliced
- 6 potatoes, peeled and cubed
- 1 large onion, chopped
- 2 tablespoons butter
- 2 teaspoons granulated sugar
- 1 package (about 10 ounces) frozen peas

Step 1
Rinse lamb meat under running water. Dry with paper towel then cut meat into 1-1/2 inches cubes.

Brown lamb cubes in a pot with vegetable oil over medium-high heat. Add flour. Sprinkle with salt, pepper, and continue cooking.

Turn heat up to high. Cook until browned. Pour in the beef broth and wait to a boil. When boiling, add crushed garlic cloves, bay leaves, thyme, and chopped tomato. Again, bring to a boil then lower the heat. Cover, simmer for 40 to 45 minutes.

While the lamb is simmering, melt butter in a skillet and saute diced potatoes, sliced carrots, and chopped onion. Sprinkle contents with sugar. Cook for 1 minute, stirring.

Add skillet ingredients to the lamb mixture. Simmer 45 minutes more, or until the root vegetables are tender. Add frozen peas a few minutes before done cooking. Great over cooked rice and pasta.
Recipe for 6-8 servings.
